As soon as the clams pop open, after 8 minutes, transfer them carefully with tongs to a platter. Set up the littleneck clams directly on the grill. Remove from the heat, stir in the olive oil, parsley, and bacon season with just a little salt and pepper. Place a medium saute pan over medium-high heat, add olive oil the garlic, and red pepper flakes and cook until the garlic is brown (not burnt). Place the clams on a sheet tray and put them in the preheated oven for 2 to 3 minutes or until the clams just begin to open. Arugula and sliced cheery tomatoes (for presentation).They are so delicious and the Sparks Grill made it so easy to make!! We will definitely be making these every summer. While in the Hamptons I grilled as much as possible on our Spark Grill! One recipe that I couldn’t wait to make was my version of Grilled Clams Casino! We typically make clams casino with bread crumbs but decided to skip it to so they didn’t overpower the clam.
